One Drum Unit, Four Ways to Spin It

The core of the machine is a pair of counter-rotating stainless steel drums with helical ribs. Fresh coffee cherries drop from the hopper into the V-shaped gap between the drums. The ribs grip the cherries, pull them through the gap and squeeze the outer skin and pulp off the bean. The parchment-covered green bean passes through-the gap is set slightly wider than the bean diameter so the bean itself is not crushed. The skin and pulp exit separately.

The hand-crank version costs the least and needs nothing but a person turning the handle. One farmer cranks while another feeds cherries into the hopper. Output is 100–150 kilograms per hour-enough to pulp the day's harvest from a one- or two-hectare smallholding. The electric motor version bolts onto the same frame and runs the same drums at higher speed for 300–600 kilograms per hour. The gasoline and diesel versions go where the power lines do not-coffee farms at 1,800 meters in the Ethiopian highlands, hillside plots in the Colombian cordillera, forest-garden farms in Sumatra.

The drums, the gap adjustment mechanism, the frame, the hopper and the outlets are identical across all four versions. A cooperative stocking one set of spare drums and belts covers every pulper it owns regardless of drive type. A farmer who starts with the hand-crank version can later buy an electric motor kit, bolt it to the existing frame, swap the pulley and upgrade to powered operation without buying a whole new machine.

Why the Gap Width Is the Only Setting That Matters

Coffee cherry diameters vary by variety and ripeness. Arabica runs roughly 10–15 millimeters. Robusta runs 8–12. The gap between the two drums must be wider than the parchment-covered bean but narrower than the whole cherry. Too narrow and the drums crush the parchment, exposing the bean to the fermentation tank's microbes and enzymes before the mucilage is properly broken down-this shows up later as off-flavors in the cup and a lower auction price. Too wide and patches of skin remain on the beans, requiring a second pass or hand-picking.

The gap adjusts with a handwheel on the side of the machine. Run a small test batch-a handful of cherries-through the pulper. Check the output. Skin not fully removed: tighten the gap half a turn. Parchment damaged: loosen half a turn. When the setting is right, lock it and run the full batch. Each new delivery of cherries from a different farm or a different picking round may need a fresh adjustment. The variety, the altitude, the rainfall that season-all of it changes the average cherry size.

Stainless steel drums hold their gap setting longer than carbon steel. Coffee pulp is mildly acidic-pH around 5.0–5.5. Carbon steel drums slowly corrode in continuous wet operation. The surface roughens. A rough drum surface abrades parchment. Stainless does not corrode. The drum surface stays smooth. The parchment stays intact. The beans come out clean.

FAQ

Q: Can the hand-crank version be upgraded to electric later?
Yes. The drum unit and frame are the same. Order an electric motor kit with mounting bracket. Bolt the motor to the frame. Fit the correct pulley. Connect power. The upgrade costs roughly 60–70% of a complete electric machine.

Q: Does the same machine work for both Arabica and Robusta?
Yes. Adjust the drum gap only. Arabica cherries are larger-widen the gap. Robusta are smaller-narrow it. Test a handful before running the full batch.

Q: Can this machine pulp cocoa beans?
Yes. Widen the drum gap to accommodate the larger cocoa bean diameter. Best results with fermented and partially dried cocoa beans rather than fresh-picked pods.
